Can Italian Cypress be kept small?

Is it possible to keep an Italian Cypress short? Like.. Under 15 feet tall and thinner?
I want to plant them but I don't want them going past my roof-line.

You would be better choosing a small slender variety which would not need trimming. There are several that would do just what you are after nicely - look for one called juniper skyrocket for example, or there is a French one called sempervirens that has a nice golden variety. Trying to prevent a tree doing what it wants to do naturally isn't always the best plan.
