I read online that celosia (cockscomb) leaves are edible. Is this all types of cockscomb or only certain types?
I saw where they have ones that grow 4 foot tall and are dinner plate size or larger...I have raised the "red chief" and "yellow chief" smaller ones before.
The articles below bear reading. I'd suggest you research your particular cultivars (Google "edible (name of cultivar)".
Celosia argentea var. argentea or Lagos spinach (a.k.a. quail grass, Soko, Celosia, feather cockscomb) is a broadleaf annual leaf vegetable belonging to the Amaranth family (Amaranthaceae). It grows widespread across northern South America, tropical Africa, the West Indies, South, East and Southeast Asia where it is grown as a native or naturalized wildflower, and is cultivated as a nutritious leafy green vegetable.

The flowers are often brilliantly colored, and the green foliage may contain large amounts of anthocyanin pigments. The leaves, young stems, and young flowers are eaten as a pot herb. Much of the pigment is lost on cooking, but the leaves retain a pleasant green color.
Three cultivars were evaluated during the 1997 spring season. Celosia argentia cv. USA produced the highest yield and productivity (Table 1). C. argentia cv. India and C. argentia cv. Quailgrass have similar yield of edible leaves. All cultivars were resistant to pest and diseases. Celosia appears to be a good alternative leaf vegetable to local amaranth which is very susceptible to many insect pests.
